How Should You Clean a Wooden Cutting Board?

For everyday cleaning, remove crumbs and food residue before wiping the board with a soft, damp cloth.

When a more thorough clean is needed:

  1. Wash the board briefly by hand with warm water.
  2. Use a mild dishwashing detergent and a soft sponge or cloth.
  3. Clean both sides of the board.
  4. Rinse it without leaving it submerged in water.
  5. Dry it immediately with a clean cloth.
  6. Leave it standing on its edge until completely dry.

Allowing air to circulate around both sides helps the wood dry more evenly.

Never Put a Wooden Board in the Dishwasher

A dishwasher exposes the wood to prolonged moisture, high temperatures and aggressive detergents.

This can cause the wood to become rough, dry out, warp or develop cracks. For the same reason, never leave a wooden board soaking in a sink or place it next to a strong source of direct heat to dry.

Always wash it briefly by hand and dry it immediately afterwards.

When Does a Wooden Cutting Board Need Oiling?

There is no fixed schedule that suits every board.

How often it needs oil depends on how frequently you use and wash it, the conditions in your kitchen and the natural characteristics of the wood.

Your board may be ready for re-oiling when:

  • the surface looks lighter or duller than usual
  • the colour and grain appear less pronounced
  • the wood feels dry or slightly rough
  • water is absorbed into the surface more quickly

It is better to observe the wood than follow a strict calendar.

Which Oil Should You Use?

Use only a food-safe oil specifically intended for wooden cutting boards and food-contact surfaces.

Always follow the instructions supplied by the oil manufacturer. Avoid ordinary cooking oils unless their manufacturer explicitly states that they are suitable for maintaining wooden cutting boards, as some oils can become sticky or develop an unpleasant smell over time.

The right care oil nourishes the surface, restores the depth of the grain and helps protect the wood during everyday use.

How to Oil Your Cutting Board

Before applying oil, make sure the board is clean and completely dry.

Apply the oil according to the manufacturer’s instructions, spreading it evenly across the surface, edges and corners. Because moisture affects the entire piece of wood, remember to treat both sides, even if you use one side more frequently.

Allow the oil enough time to penetrate the wood, then remove any excess with a clean, lint-free cloth.

Do not use the board again until the surface feels dry and the oil has been absorbed as directed by the manufacturer.

Care for Both Sides

Even when a board is mainly used on one side, both surfaces react to changes in moisture and temperature.

Cleaning, drying and oiling both sides helps the wood respond more evenly to its surroundings. This is especially important for double-sided cutting and serving boards without feet or a juice groove.

Whenever possible, alternate between the two working surfaces rather than always using the same side.

Cutting Marks Are Part of a Working Board

A wooden cutting board is designed to be used.
